TISHOMINGO COUNTY, Miss - Mississippi State University Extension Agent Emily Vestal recently taught a hands-on canning class with Mrs. Faith Robinson’s students at Tishomingo County High School.
Vestal taught the students about canning equipment, headspace, the boiling-water processing method, storage of home-canned goods, the dangers of improper canning techniques, and the importance of using scientifically tested food preservation resources for home canning.
The students all got to take part in making delicious blueberry jam.
